HISTORY

When my grandfather began “to make wine cellar “ the grape came collected in large wicker hampers, transported with a wagon hauled from oxen and pressed, in wine cellar, with the feet. All job was manual, simple and laborious.

PHILOSOPHY

The Oltrepo Pavese Wine cellars revives the born dream born a century ago: transforming the grapes produced from the vineyards in good and genuine wines, propose to old and new friends, than they know them to appreciate. Our more valuable grapes come cured using willow coppers in order to support the lives and filters with bags of juta in order conserving of all the organoleptic properties. The collection of all the products still comes carried out rigorously by hand.

AREAS

In origin of “alta Valle Versa” (south area of the Oltrepo Pavese) grow wheat, corn and fruit trees.
The arrival of blots some agricultural has given one carried out decidedly to the development grapes of this area. The crawler track tractor, for example, allowed to hoe and to transport goodses. The systems of the vineyards are therefore multiply and replacing many cultivations.
The territory, definitely suited for white wines such as the Moscato and the Pinot, instead was mainly cultivated with red grapes, which Barbera, Croatina and partially Rare Grape, because it was use in every family to produce in just the wine from drink.
Sure dominant today are the black Pinot and gray one, the Chardonnay, the Moscato di Volpara and the Riesling, Italico and Renano. Barbera and Croatina however have maintained one they good territorial presence.

The Moscato di Volpara

The Moscato di Volpara, only and precious wine, today is the spearhead of the Oltrepo’ Pavese Wine cellar. The territory has been sure of great aid but all the rest has had to the job, to the search and the experimentation.
The choice of the best suited among those vines, the strictly manual harvesting carried out only at the height of ripeness, the management of must and its fermentation, a slow and taken care of filtration, periodicals control with analytical and organoleptic tests aiming to always obtain the best to us from every vintage year for being able at last to bottle, with pride, this jewel golden very knowing as the engagement will be appreciated and gratified from the more and more numerous ones and becomes attached friends and customers to you.

Red Wines

O.P. BARBERA
Made from 100% selected Barbera grapes, this deep ruby red wine has a vinous, intense scent and a dry, full and agreeable palate. It is an ideal pairing for rich starters and roast beef.
Serving temperature: 16° – 18°C.

RIVA ROSSA
Strongly structured noble red wine made from carefully selected Barbera grapes. Oak barrel (barriques) aged, RIVA ROSSA is an ideal pairing for roast beef, braised meats and game. Best served at room
temperature, the bottle should be uncorked a few hours earlier.

ROSSO RUBINO
Sweet red wine made from Croatina grapes (100%).
The wine thus obtained is immediately filtered in order to prevent the sugars from evolving into alcohol. It is an ideal dessert wine, dry and full bodied, with notes of wild strawberry.
Best served chilled.

O.P. BONARDA
Deep ruby red wine and intensely scented wine made from pure Croatina grapes.
The palate is full and soft with a persistent bitter almond note.
It is an ideal pairing for Italian style cold cuts, Braised meat sauce ravioli, lasagna, mixed boiled meats and unripened cheeses.
Serving temperature: 16° – 18° C.

LA CENFRASCA
This peculiar Bonarda is an excellent wine made with the grapes from low yielding, old vines. The favorable exposure and a good ripening level make this wine really special.
Cenfrasca is the anagram of the Cellar owner’s daughter, Francesca.

O.P. BUTTAFUOCO
Noble, very deep ruby red wine made by blending Croatina, Barbera and Uva Rara grapes. It is harmonious, well- rounded, scented and greatly structured and an ideal pairing for red
meats and game.
Serving temperature: 16°-18° C.

VINACERO
Made from Pinot Noir grapes vinified red, this wine has a really fine and noble palate, faded red color and is made with the grapes from our “Gorre” vineyard.
Refined for 6/8 months in oak “barriques” (barrels), its name, VINACERO, is the anagram of the Cellar owner’s daughter: Veronica.

O.P. BARBERA
Made from 100% selected Barbera grapes, this deep ruby red wine has a vinous, intense scent and a dry, full and agreeable palate. It is an ideal pairing for rich starters and roast beef.
Serving temperature: 16° – 18°C.
This is the not sparkling version of Barbera.

White Wines

O.P. PINOT NERO
Made from Pinot noir (85%) and Chardonnay (15%) grapes, vinified white and undergoing natural bottle fermentation. It is a fresh, fragrant and delicate allcourse wine. Ideal to be shared with friends, it is best served at 7° – 8° C.

O.P. RIESLING ITALICO
White wine made from 80% Italic Riesling grapes and 20% Rhine Riesling variety. It features typical greenish hues, a fragrant, harmonious and persistent taste. It is an ideal pairing for fish starters, vegetable dishes and “frittate”.
Serving temperature: 7° – 8° C.

CROSE’
Rosé wine made from Pinot Noir grapes vinified rosé. It has a great scent with peculiar bread crust notes. Ideally paired with fried fish and shellfish.
Serving temperature: 7° – 8° C.

O.P. CHARDONNAY
White aromatic dry wine made from 100% Chardonnay grapes, it has a straw yellow color and very persistent and intense scents. It is an ideal pairing for fish-based antipasti (appetizers) and seafood.
Serving temperature 7°-8° C.

PINOT GRIGIO
White wine, full, yellow pale, with delicate fragrance and pleasantly soft flavor. A fully ripe stand notes of nuts and honey. It is excellent to accompany dishes like mushrooms, fish and seafood.
Serving temperature 7°-8° C.

LACLIMA
Still, fresh and delicate Chardonnay, Oak barrel (barriques) aged, LACLIMA is made with the grapes from our “Prumù” vineyards. Very elegant and refined, it is an ideal pairing for fish dishes. LACLIMA is the anagram of the Cellar owner’s daughter: Camilla.

Sparkling Wines

PINOT SPUMANTE CHARMAT (SPARKLING)
“IL FIERO”
Made from Pinot Noir grapes, vinified white by Charmat method. It is a faded straw yellow colored spumante wine with light copper hues. The perlage is rich, lively and persistent, the palate is dry and
velvety with an agreeable slightly acid note.

ROSE’ SPUMANTE CHARMAT “LA PIETTA” (SPARKLING)
Made from Pinot Noir grapes, vinified pink by Charmat method. It is a faded straw “rosè” colored spumante wine with light copper hues. The perlage is rich, lively and persistent, the palate is dry and velvety with an agreeable slightly acid note.

PINOT SPUMANTE BRUT (SPARKLING)
METODO CLASSICO
Made from Pinot Noir grapes (85%) and Chardonnay grapes (15%) vinified white by classic method “Champenois”. It is an “important” highly elegant and refined spumante. This BRUT is an ideal pairing for fish based antipasti (appetizers), shellfish and seafood.

The Moscato di Volpara

MOSCATO DI VOLPARA TRADIZIONALE
Due to its peculiar territory-influenced features, the Moscato di Volpara wines is considered one of the most fragrant, scented and delicate Oltrepò Pavese wines. For this reason we consider this wine our leding product. It is a perfect wine to be offered to friends in all occasions to exalt dessert and fruit, peach especially. Now also available in the small version 0,375 Lt.

MOSCATO DI VOLPARA (SPARKLING)
SPUMANTE
This Charmat method spumante in obtained by secondary fermentation in autoclave and keeps all the typical features of traditional spumante unaltered. Il Volpara has a fine perlage and rich froth and is best served chilled, in wide cups in order to exalt its fragrance.

MOSCATO DI VOLPARA PASSITO
Made from Moscato grapes left to dry on the wine stocks until late November. After vinification the wine is left to rest in the barrel for a full year. Rich with aromatic structure and a unique and delicate palate, this wine is a perfect pairing for strong cheeses and an ideal after-dinner choice.
It is a very exclusive product, only 500 bottles for year.
